Green or Cooked? What does it mean?
Green is another word for raw, so when you see the word “green” before Prawn, you know it hasn’t been cooked yet.

We recommend cooked Prawns if you want to eat them now, and green if you want to add them to a dish you’re making. Adding cooked Prawns to a dish during the cooking process can make them tough and overcooked.

The name 'Tiger Prawn' actually covers a number of different species, each of which has the distinctive tiger stripes on its back. In particular, the species Black, Brown, Kuruma, and Grooved Tiger Prawns are generally referred to simply as 'Tigers'. Black and Kuruma Tigers are well suited to farming and consequently have better availability than other species.
Found along the Northern Coast of Australia from central NSW to Shark Bay, WA, Tiger Prawns are both marine and estuarine, at up to 150m. Juveniles are found in estuaries among seagrass and mangroves. Species are farmed between Cooktown and Brisbane. Farms also exist in Queensland, Northern Territory and Western Australia. 
Prawns are highly perishable in their raw state. Wild caught prawns are boiled at sea and frozen down or frozen raw as soon as they are caught. Farmed prawns are generally frozen raw.

When cooking with prawns, buy green (raw) prawns, as cooked prawns will toughen if reheated.
Prawns are great for grilling, frying, crumbing & boiling. Grab some shelled cutlets for a quick and easy cook-up!


king prawns

A common mistake that people make is that “King” prawn refers to the size of the prawn. It doesn’t! It’s actually the name of a species of prawn. King Prawns are caught in the wild, cooked onboard the fishing vessel, and snap frozen to maintain the maximum possible freshness. This means they are available all year round, although the season does have a peak between February and June. 
Prawns are sized according to the number of prawns per pound. So, somewhat counter-intuitively, the smaller the number, the larger the prawn. 10/15 size is the most common and the most affordable. We also stock U/10 (less than 10 to the pound) and U/8 (less than eight to the pound). Large sizes like these are excellent for the barbecue! 
Kind Prawns are found offshore to depths of over 220m, with juveniles preferring estuaries or shallow coastal waters. Western King Prawns have the widest distribution, found around the Northern Australian coastline. Eastern are found from Bass Strait to Rockhampton.

Similar to Tiger prawns, kings are a great addition to most meals, however these are our prawn of choice if you’re simply looking to take the shell off and tuck in.
